PLANTLAB Seal Programs

As the leader in plant-based culinary education, PLANTLAB is proud to offer two intensive Seal Programs that provide a fully comprehensive experience for those looking to become a true culinary professional. Each courses' career-inspired curriculum builds upon the last, ensuring a well-rounded mastery of everything from advanced techniques and recipe ideation to marketing and restaurant management. These programs are designed to equip students with the necessary tools to launch their careers in the culinary space.

Our state-of-the-art kitchens and experienced instructors maintain a structured learning environment while also cultivating a creative space for you to develop your culinary style.

PLANTLAB CORE SEAL

720 ONSITE + 235 INSTRUCTOR-SUPPORTED ONLINE COURSE HOURS

A six-month-long exploration and mastery of beginner through advanced culinary concepts and techniques that combines Levels 1-3 of our Cooked and Raw programs. With the burgeoning demand for plant-based cuisine—both elevated and approachable—our combination of raw and cooked training provides our students with career flexibility that other culinary schools cannot offer.

PLANT-BASED RAW TRAINING

Level 1: Fundamentals of Raw Cuisine - 120 hours
Level 1 emphasizes proper use of equipment and preparation of ingredients, flavor balancing, knife skills, simple fermentation, and food safety.
Level 2: Advanced Raw Cuisine - 120 hours
Advanced Raw Cuisine builds upon Level 1, further exploring fermentation, recipe structure, and the use of advanced equipment, while instructors dive into business-related topics including marketing and costing.
Level 3: Professional Raw Applications - 120 hours
Each week, students are immersed in a different aspect of the dining experience, beginning with the amuse bouche and ending with mignardises. All four weeks culminate in a student-planned, and executed lunch or dinner service.



PLANT-BASED COOKED TRAINING

Level 1: Fundamentals of Cooking - 120 hours
The curriculum will cover proper knife skills and traditional cooking methods leading students to prepare soups, grains, legumes, basic savory flatbread, along with complete dishes.
Level 2: Advanced Cooking - 120 hours
Explore advanced vegetable and grain cooking techniques with an emphasis on kitchen management skills, with lessons around organization, preparation, and menu composition.
Level 3: Professional Cooking - 120 hours
Utilizing professional techniques mastered in levels 1-3, students will create a ten-course dinner containing canapés, amuse bouche, five courses, palate cleanser, dessert, cheese, and coffee/tea service with mignardises.

PLANTLAB MASTER SEAL

1200 ONSITE + 235 INSTRUCTOR-SUPPORTED ONLINE COURSE HOURS

The PLANTLAB Master Seal Program is a ten-month-long onsite experience that combines the Core Seal and adds our Plant-Based Pastry courses. This will include Levels 1 - Level 3 of our Raw, Cooked, and Pastry courses plus Baking, providing students with the most robust plant-based culinary education available in the world. Students will also receive supplemental online courses including Culinary Nutrition, Sports Nutrition, and Elite Sports Nutrition, along with three years of access to our online platform.

PLANTLAB CORE SEAL TRAINING PLUS:

PLANT-BASED PASTRY TRAINING - 480 hours

Level 1: Pastry and Desserts - 120 hours
Study traditional patisserie philosophies and how they integrate with modern, innovative methods. By the end of Level 1, students will have a clear understanding of a variety of techniques—like culturing, creaming, and emulsifying, setting the foundation for their pastry endeavors. From raw cookies to composed loaf cakes, they will have the tools to create, explore and expand their creativity.
Level 2: Pastry and Desserts - 120 hours
Students will be exploring both raw and cooked frozen desserts, specialty + novelty items, as well as healthy treats. The techniques learned in Level 2 incorporate flair, finishing, and precision. Students will also focus on cake construction and theory, the history of pastry and how it has evolved, and where the market is heading.
Level 3: Pastry and Desserts - 120 hours
The focus of each week will include mastering advanced techniques such as tempering chocolate, composing candy bars, handling raw chocolate and conceptualizing entremets. Students will be expected to format comprehensive recipes, provide costing, create a cohesive menu, and write detailed preparation and production sheets for each.
Baking - 120 hours
Instructors will guide students through the steps of plant-based bread and pizza making, from quality ingredient selection through storage, covering core techniques students will rely on throughout the program and beyond.

ONLINE NUTRITION + SUPPLEMENTAL TRAINING

We believe that being a master plant-based artisan comes from both practice and the continual pursuit of knowledge and experiences. Whether you choose to travel to gain culinary inspiration or work closely with a network of colleagues to develop your creativity, a great chef never stops learning.

When enrolling for the Core Seal or Master Seal programs, you will receive a full catalog of online courses to supplement your training. These programs will include those listed below, along with two years of access to any self-paced courses we have available.

Culinary Nutrition - 135 hours
Students will learn recipes and techniques from many different nourishing traditions; as well as a variety of raw food dishes that are designed for healing and the less gourmet.
Sports Nutrition - 50 hours
This two-week course covers the full spectrum of sports nutrition topics including reducing stress and improving sleep to speed recovery, nutrient density and digestion, macro and micronutrients and plant-based protein, goal-based nutrition timing, superfoods for peak performance and the mind-body connection.
Elite Sports Nutrition - 50 hours
Designed with vegan athletes in mind, students graduating from this series take away the training needed to help them achieve breakthrough performances, optimal health, and fitness longevity.
2 Years of Self-Paced Online Courses
PLANTLAB's self-paced online courses will consist of a variety of material that will complement any professional skillset. While completion of these courses is not required to receive your Seal Certification, they will be available to you to work through at your leisure for a two-year period upon enrollment.

COURSE ACCESSIBILITY

Upon enrollment, students will have two full calendar years to complete the onsite training and instructor-supported online courses to receive a Seal Certification from PLANTLAB Culinary. Unlimited access to the self-paced online catalog of programs will be available at your convenience and all future classes released during your access time.
